I *think* I found this at all recipes. I doubt it though.

I made these for the first time yesterday. I wish I knew where I got the original recipe from, but I don't, sorry But, I do have my modified recipe. You could and should use whole wheat flour for this to make it healthier, but I didn't have that on hand today. Oh and I used real sugar because I had the intentions of eating these myself. But sadly, I only ate 2 because of the men in my life. They didn't even believe that these weren't too bad for you.

INGREDIENTS

1/4 cup of skim milk (I used 1%)
1 tsp of baking powder
1/2 tsp salt
1 c of finely chopped apple, which is about 1 medium sized apple
3/4 cup of sugar
1 egg
1/3 c of butter substitute. (I used I Can't Believe It's Not Butter Light, but if you use real butter, remember you're adding on about 30 cals. Not bad!)
1 1/2 cup of all purpose flour
1 tsp of cinnamon
1/2 tsp all spice

DIRECTIONS

1. Mix: Egg, butter & Sugar
2. Add in the milk
3. Mix: Dry ingredients in seperate bowl.
4. Gradually add the dry ingrediants to the butter and sugar mixture.
5. Fold in the Apples
6. Spoon in roughly two table spoons into each of the muffin cups (Don't forget to use the muffin papers.)
7. Bake in 375 F degree oven for 20-25 minutes. In my oven, it takes 21 mins

**Makes 12 muffins
