Serves: 4; Prep Time: 12 minutes; Cook Time: 18 minutes

Ingredients:
3 strips lean bacon
1 pound jumbo shrimp, peeled and deveined
1/2 cup red onion, chopped
3 cloves garlic, minced
2 canned chipotle chilies, minced
1/2 tsp ground coriander
1 cup salsa
14-ounce jar sliced roasted red peppers, drained
Salt and freshly ground black pepper to taste
Directions:
Place the bacon in a large nonstick skillet over medium heat.
Sizzle, turning occasionally, until cooked through (about 4 minutes).
Cool and crumble into bits. Season the shrimp with salt and pepper.
Place in the same skillet used to cook bacon over medium heat and sauté for 1 minute. Transfer to a plate. Add onion, garlic, chipotle chilies, and ground coriander to skillet; sauté for 3 minutes. Stir in the salsa and roasted red peppers.
Reduce heat to low, cover and simmer for 8 minutes. Stir in the shrimp and heat until just cooked through (about 2 minutes). Season with additional salt and pepper to taste.
Serve garnished with crumbled bacon.
