Here is a fabulous recipe that is so simple. The inspiration for this recipe came after having WAY to many hard-boiled eggs left over from easter. Since eggs, more specifically, the egg-whites, have tons of protein and are so flexible to add to any dish, I came up with a simple salad.

What You Need:

1 medium to large tomato- diced or wedged
1/4 red onion- diced
3 eggs- hardboiled, yolk-removed, and coarsely diced
1 small cucumber- sliced or diced
1/2 tsp of Olive Oil
dash of paprika
dash of salt to taste
dash any seasoning mix (I highly recommend Mrs. Dash's tomato, garlic, basil shaker blend)

What You Do:

-Just chop up and dice all the ingredients to whatever size you prefer; place ingredients onto a plate or bowl
-add olive oil and seasonings
-toss together
-serve with wheat toast, or like the picture above-serve with honey wheat pretzels!

This salad is so quick, easy, and can be made in bulk to last you for a week. You get a great source of fiber, protein, and lycopene, and is almost fat-free and very low-cal. Best of all, you can tinker with the salad to make it your very own!
