Hey everybody! thank you for the lovely comments and the great mozzarella idea for my tomato and egg salad! I actually just finished cooking some breakfast for my little sister and I and thought I should share the just-made-up recipe with you! I forgot to take a picture of the lovely meal, but next time I make it I definitely will and post it up!
This recipe, again, centers on eggs. I really think egg whites are great because each egg white is about 15 calories of protein- so that means you feel fuller longer and quicker (halfway through the omelet I was feeling very full and it wasn't even that big) and plus protein is awesome for muscle development.... Also I added bran cereal to the recipe in order to incorporate some fiber into my breakfast (fiber is a necessity I think for a healthy diet and trimmer waist).
Serving = 1 person (1 small omelet)
What You Need:
-3 egg whites
-1/3 cup of All-Bran Cereal, crushed
-1/8 of a red onion, chopped
-1 tomato, sliced
-seasonings of your choice (that you like on your eggs)
-1 slice of any cheese (I used fat-free American in mine since Am.Cheese melts so easy)
-salt & pepper
-sugar
What You Do:
-beat together the egg whites, the crushed bran, seasonings, salt and pepper- put off to the side
-in a pan heat up the onions until they are slightly soft, but only slightly, you want to keep the crunch
-take onions off the pan and stir in a pinch of sugar
-put tomato slices on pan after sprinkling them with salt and oregano...keep them on pan until just before they start to fall apart....take it off the pan and put aside
-pour egg white/bran mixture into the pan and cook it as you would an omelet
-after flipping the omelet, put tomato and American cheese on one side of the large circle
-fold the no-tom/cheese side over onto the side with the tomato and cheese and hold with spoon so the cheese can adhere to the top cover of the egg....
-put the omelet on a place and garnish with the onions
it may seem like it is a lot of work, but really it takes 15 minutes tops!
I really hope everybody will try this recipe...it was spontaneously created and came out with tasty, satisfying, delicious results!

Bran how intereseting.. I've never tried this before but it sounds GOOD! Very healthy too.. I'll bookmark and share the recipe!
I do like to add wheat germ to whatever I can so.. adding bran cereal is a great idea

4I'll try the bran... you never can get enough fiber and this is the last place I would have thought of putting bran.
