This is so yummy, and health conscious, for a breakfast meal! 
Serves: 1
Prep Time: 15 minutes
Cook Time: 10 minutes
Ingredients:
Cooking Spray
1 cup Veggies (pick any combo: broccoli, mushrooms, tomatoes, peppers, spinach, and fresh herbs)
2 eggs, medium
2 tbsp water
Sea salt & ground black pepper
1 tbsp. lowfat cream cheese
1/2 grapefruit
Step 1:
Lightly spray a non-stick saute pan with cooking spray. Add veggies and saute until softened, about 4 minutes, depending on veggies. Drain excess water.
Step 2:
Meanwhiele, whisk the eggs, water, salt, and pepper together in a bowl. Return pan with veggies to the stove top and pour egg mixture over veggies.
Step 3:
Cook until omelet is set, about 3 minutes. Add cream cheese and fold into the omelet. Garnish with fresh herbs.
Section the grapefruit half and serve with omelet ..
