When I think of Fall, I think of pumpkins, when I think of pumpkins I think of Halloween.
Thinking of Halloween is a whole different story though!
Anyways, pumpkins are the perfect Fall comfort food, they can be made into so many things.
Sweet things!
...and did I mention that they are HEALTHY?
Pumpkins are packed with vitamins and color, and aren't ALL that carby.
My all time fave cookies for Fall are most definitely Pumpkin Cookies.
Since it's STILL National Cookie Month, I thought that these would be the perfect October cookies.
The main cookie of the National Cookie Month, here's the recipe:

Makes 40 delicious cookies
Ingredients:
2 1/2 cups all-purpose flour
2 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/4 cup butter or margarine, softened
1/4 cup applesauce
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract
For the icing:
2 cups confectioners' sugar
3 tablespoons milk
1 teaspoon vanilla extract
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
2. In a medium bowl, cream together the 1/4 cup of butter, applesauce and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
3. Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.
4. To Make Icing: Combine confectioners' sugar, milk, and 1 teaspoon vanilla. Add milk as needed, to achieve drizzling consistency.
You can also SKIP the icing and add a little more sugar to the batter.
...Or just skip the icing period, this way you can really taste the wonderful flavors of the pumpkin.
One more thing, if you want the Halloween effect then dip the cookies into some dark chocolate for the orange and sorta black Halloween decoration! Yum!

I made these the other night and they were soo delicious.. and I talked myself into eating a couple since they are so healthy. Bwahaha. My icing wasn't as thick as it is in the picture above, but it was still delicious!
