If you LOVE Mexican food then you should consider having it for breakfast. My favorite mexican breakfast is Huevos Rancheros, but I aboslutely love enchiladas, so I decided to combine the two into something completely delicious (and healthy)!
These protein packed enchiladas are made with whole wheat tortillas (feel free to sub gluten-free corn or low carb), mostly egg whites, refried black beans, low fat cheese, cilantro, and red peppers. Topped with avocado, and you've got yourself a healthy meal! They're very filling but won't weigh you down, which means you can save room for some guac.
