Edamame Guacamole

I LOVE guacamole. I love it so much I have been trying desperately to find a way to make it healthier. Edamame is the perfect solution. Low in calories and high in protein, it's filled with vitamins and minerals. Added to guacamole, the result is a lower calorie and nutrient dense snack that is perfect with sliced fresh veggies.

Ingredients:


1 medium ripe avocado

1 cup shelled frozen edamame

3 cloves of garlic

2 tbsp fresh cilantro, washed

1 tsp chili powder

juice of 1 lime

1 jalapeno pepper, washed and seeded

1 tsp salt

1 tbsp black pepper
