I just made this and wanted to share. It's vegetarian chicken fettucine alfredo and it makes 2 veryyyyy generous servings!
Lol I'm on a diet so everything needs to be accountable. Instead of regular fettuccine noodles i'm using Tofu Shirataki noodles you can get at Whole foods, they're like 20 calories with 3g carb per 4oz serving (bag has 8oz). Aaaammmazing stuff.
Faux Chicken Fettuccine Alfredo - Low Carb wonder
1) 1 8oz bag of Tofu Shirataki Fettuccine Noodles
Rinse these very well and dry dry dry dry them well
2)Chopped Garlic
- 1/2 Medium Onion sliced
- 2/3 Raw Sliced Mushrooms
Dry sauté these in a frying pan on medium (or nuke in a microwave for 2-3 minutes) till fully cooked and then toss the pasta in to heat up and dry up some of liquid. Heat till warmed.
3)2/3 Chopped Frozen Broccoli (nuked in the microwave for 2 minutes)
- 1 Laughing Cow Cheese - Light N Creamy Wedge
- 4 1/2 tbsp Fage Total 0% Greek Yogurt
Favorite Seasonings (Pepper, Garlic powder, etc)
Mix the brocco and the cheese and fage yogurt together till creamy. Season to your liking.
I try to keep the sodium at a minimum so I use no salt seasonings
Toss everything together and top with 1 sliced Morningstar Farms- Breaded Chicken Patties
Without the chicken patty it'll be like 13g carb per serving and lower sodium. Buuuut i love these patties, makes me think I'm eating chicken parmigiano.
Filling and DEeeeelicious!
Feel free to add some parmesan to yours
