When I recently found out that the box of frozen pizza I bought the other day had been recalled, I took it as a sign. I haven't had frozen pizza in forever and, when I finally give in, the very next day, news reports pop up saying the manufacturer was recalling due to potential E. coli.
Great.
Not one to tempt fate, I started scouring the internet for "healthy" recipes. I don't have a lot of time in the evenings to cook, so the faster, the better! Plus, I'm a grazer --- I snack throughout the day and prefer to have one or two small meals --- so any easy-to-make snacks are definitely needed!
I found a great recipe on parenting.com for pizza bagels! I imagine it'd be something your kids could help make but it's definitely adult-friendly as well. It involves making two purees: orange, made with carrots and yams, and white, made from cannellini beans. Naturally, I'd suggest making those beforehand and sticking them in the fridge.
• 1/2 cup tomato sauce
• 1/4 cup White Puree
• 3 Tbs Orange Puree
• 4 mini-bagels, sliced in half (preferably whole wheat)
• 1 cup grated part-skim mozzarella
1. Preheat oven or toaster oven to 350 degrees. Combine tomato sauce with White and Orange purees. Mix well.
2. Spread 1 to 2 tablespoons of sauce on each bagel half, and then top completely with 2 tablespoons grated cheese (without covering the hole). Bake 5 to 6 minutes, or until cheese is melted and bubbly.
Per serving: 124 calories, 3 g fat (2 g saturated), 327 mg sodium, 8 mg cholesterol.
Not too bad when you compare it with Bagel Bites [200 calories, 6 g fat (2.5 saturated), 550mg sodium, 10 mg cholesterol] which don't have the added benefit of veggies!
