Here's my challenge... I'm looking for lunch ideas that are easy to put together, and that I can take along to work for myself. There are not many recipes out there for lunch time... on most recipe sites, they seem to fall under snack/appetizers... and we all know most appetizer recipes are higher in calories and fat... HELP!

Do you like hummus? If so, you can take a container of hummus, a pita bread, some baby carrots, and any other veggies with you for lunch. It's healthy and filling!
1I like to have salads for lunch often. A Hard boiled egg, nuts or beans make great additions.
Sometimes I'll make this potato salad, it is good on it's own or over greens.
Potato Vegetable Salad
5 Red Potatoes
Bunch of scallions, chopped
Cucumber sliced into chunks (seedless or with seeds removed)
2 Cups of cooked Green Beans or peas, at room temp or cold
1 Cup Sour cream (low fat or yogurt can be substituted)
2 tablespoons horseradish
2 tablespoons course ground mustard
splash of lime juice
splash of White wine Vinegar
1 teaspoon celery seed
3 tablespoons parsley (to taste)
S/P to taste
Boil potatoes with skins on. After cooked rinse with cold water and slice into 1-2” cubes. For the dressing combine sour cream, horseradish, lime juice and mustard. Add spices and vegetables and then vinegar.
2I just posted a chick pea, tomato, feta salad in this group that works great as a take-along lunch and is easy to make.
3Here is a good and easy/healthy recipe to take for a lunch, it's a crispy tuna salad!
Prep Time: 15 minutes
Ingredients:
6 oz. can tuna, drained and flaked (any brand you prefer)
1/2 cup finely shredded carrots
1/2 cup finely chopped celery
1/3 cup mayonnaise (if desired)- tastes better with the mayonnaise though!
1/2 cup rice crackers, crumbled
Preparation:
Combine all ingredients except the rice crackers in a small bowl and mix well. Pack into insulated lunch box. Package rice crackers separately to sprinkle over salad just before eating.

4I have the same problem, end up with a sandwich everyday
5my faaavorite quick and easy sandwich I saw made on Giada De Laurentiis' show. I modified it a bit, since she fries hers in a pan:
You need:
1 tomato slice
a few basil leaves
slice of fresh mozzarella
french bread, or if your favorite crispy bread (I like to toast mine in a toaster oven before putting the sandwich together, but you might not have that in an office)
optional: 1 teaspoon of really good basalmic vinegar
Stack sandwich and eat. Even better, nuke it so the cheese is a bit melty.
you could prep this in the am and wrap in tin foil so the pieces don't slide out.
I also like to refer to the Kraft magazine for somewhat healthy alternatives, that are quick and easy to make. You can go online to their website and get it sent to you for free at kraft.com. And no, I don't work for them
6I love wraps- they are healthy and filling- and you can make them with any of your favorite things (except maybe chocolate). I buy the wrap "bread" from the store and fill with grilled chicken breast, cheese, lettuce, onion, ranch or barbeque. You can use your favorite meat a few veggies and some sauce- wrap it up and enjoy!
7I hear you. My recent job & internship have me needing to bring my lunch, which I haven't had to do in a while. I love wraps and salads, but what I also do sometimes is start off with frozen meal that has versatility.
Something like Smart Ones Sante Fe Rice and Beans, which in itself isn't completely filling, but I just bring in some cooked meat leftovers and mix them in and it is a very fulfilling lunch option. It's a change from a sandwich or wrap everyday, which can get old quick, so I just change it up.
I also find sometimes work gets crazy and I just want a more filling snack than an actual meal, especially if I am on the move. I have been loving this dip that is basically canned salmon and ranch dressing (mix what you will with it). Along with some wheat thins, it feels me up quick and ultimate bonus is it's easy and clean.
8Every night for dinner I make some kind of grilled or roasted meat. Something that would go well with salad. While I'm preparing dinner, I also prepare salads for the next day's lunches for my husband and myself. It's super easy and if you keep the produce on hand you never ever have to think about lunch. Just make sure you vary the ingredients a little from week to week so you don't get too bored. Here are some of our faves:
1. Tex/Mex theme: Use spring mix, add rinsed black beans, whole grain tortilla strips like Snyder's, pico de gallo (they sell it premade in the produce dept. here, some with mango and omg it's delicious) and sliced strips of steak,pork tenderloin, salmon, or chicken. Balsamic or Red Wine Vinaigrette both taste good.
2. Asian: think the McDonalds Asian chicken salad. Use spring mix, add canned mandarin oranges, toasted almonds, sliced red onions. Top with a sesame/ginger dressing. Don't forget the chicken.
3. Mediterranean: Spring mix, feta, red onion,black olives, cucumber, tomato, chickpeas. Balsamic Vin. Chicken.
4. Chef: Use hard boiled eggs, lean ham &/or turkey, low fat cheese, sliced black olives.
5. Spinach: Baby spinach, strawberries, canned mandarin oranges, toasted pecans, balsamic vinaigrette.
6. No meat: Didn't cook last night? No problem! Just prepare a salad without the meat and eat it along with one of those Healthy Choice lunch soups!
Here's a great little tip I thought up: Empty out a spice bottle that you never use, peel the label, and wash it. This is the perfect container for individual servings of salad dressings!
