Lately I have been seeing a lot of recipes on here that call for 'enchilada' sauce. I have been trying to find a canned version but have had no such luck. So, I was checking out recipes and happened across an enchilada recipe! Go figure! HA So, I thought I would share it with my sugar pals. This is from Women's Health magazine.
INGREDIENTS:
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon minced onion
1/2 teaspoon dried oregano
2 1/2 teaspoons chili powder
1/2 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon salt
1/4 teaspoon ground cumin
1 teaspoon dried parsley
1/4 cup salsa
1 (6 ounce) can tomato sauce
1 1/2 cups water
DIRECTIONS:
Heat the oil in a large saucepan over medium heat. Add the garlic and saute for 1 to 2 minutes. Add the onion, oregano, chili powder, basil, ground black pepper, salt, cumin, parsley, salsa and tomato sauce.
Mix together and then stir in the water. Bring to a boil, reduce heat to low and simmer for 15 to 20 minutes.

1I will say that this version may convince me to stop buying the stop and just make it! This is all stuff I have at home anyway!
2Me too ALSW.. I have all that stuff. I just don't know what enchilada sauce is supposed to taste like LOL!! So I'll have no clue if the recipe is any good.

5Thanks for sharing the recipe. I too have all the ingredients. Using any bottled sauce pales in comparison to making it fresh. Same thing with Sofrito. Thank goodness my dad taught me how to make it.

What are Sofritos?
7Sofrito is a maranade/sauce consisting of: garlic, onions, tomatoes, cilantro, olive oil, salt and pepper. We marinade meat with it, add it to beans while cooking and soups.
