Socca in muffin form.

Rosemary Chickpea Muffins

INGREDIENTS

1c garbanzo bean flour
1 c water
1 tbsp olive oil
1 tsp sea salt
1/4 tsp pepper
1 tablespoon dried rosemary

DIRECTIONS

Preheat oven to 375 degrees and line a muffin pan with 8 liners (I used silicone).
Sift flour into a medium bowl. Add in the dry ingredients and mix with a wooden spoon. Add in 1 c water and oil, and mix well for two minutes.
Drop two tablespoons of the batter into the muffin liners. Bake 20 minutes, the tops will be slightly cracked.
