Ingredients:

2 large sweet potatoes, cut into 1/2" chunks
1 Tbsp olive oil
4 sea bass fillets, 5-6 oz each (any type except Chilean)
4 scallions, sliced in half lengthwise
6 Tbsp sake
2 Tbsp low-sodium soy sauce
1 tsp grated ginger
2 Tbsp garlic-infused olive oil (if not available, warm a garlic clove in regular olive oil over medium heat, then remove clove)
18 tsp crushed chili flakes
12 c fresh spinach
Lime juice
Directions:

Preheat oven to 400F. Place potatoes in roasting pan and coat with olive oil. Cook for 45 minutes.
Meanwhile, lay out 2 pieces of tin foil; set 2 sea bass fillets on each. Bring up the sides to make a parcel. Place 2 scallion slices on each piece of fish.
Sprinkle 3 tablespoons sake, 1 tablespoon soy sauce, and 1/2 teaspoon ginger into each parcel.
Wrap the parcels loosely but seal firmly by folding over ends. Cook on baking sheet at 400F for about 25 minutes.
When fish is almost done (after about 20 minutes), heat garlic oil and chili flakes in wok or large pan; stir. Toss in spinach and cook on high until wilted.
Remove potatoes. Sprinkle with kosher salt to taste; spritz with lime juice.
Remove fish from parcels. Spoon juices in foil onto fillets and serve alongside wilted greens and potatoes.
