Try this sauteed veggie-rice blend! This looks so delish!
Makes 6 servings;
Ingredients:
2 tbs. olive oil
1 small red onion, peeled and chopped (about 1 cup)
3 large cloves garlic, peeled and chopped
3/4 cup converted original parboiled rice (like Uncle Ben’s)
1 tsp. seasoned spice blend, like The Spice Hunter The Zip
1 can (14.5 oz.) chicken broth
2 tbs. chopped fresh oregano
1 can (11 oz.) corn-and-pepper blend, like Green Giant Mexicorn, drained
1 zucchini, diced (about 1 cup)
1/4 cup chopped roasted red peppers
Directions:
In skillet over high heat, cook olive oil 30 sec. Add chopped onions, chopped garlic and rice. Cook 4 min.
Stir in spice blend, chicken broth and chopped oregano. Bring to a boil; reduce heat and cook 10 min. more
Stir in corn blend, diced zucchini and roasted red peppers; cook 5 min., or until rice is tender.
