Basic 'nana bread recipe, but this is always a crowd pleaser. Also, this gives me something to do with my old bananas. I made this classic a bit healthier with packing in more bananas, using skim milk and butter substitute.
INGREDIENTS
1 cup of sugar
8 tablespoons of butter substitute (You could use real butter, but believe it or not, this tastes better)
2 eggs
A bunch of very ripe bananas (I use 4-5, but 6 wouldn't hurt hehe)
1 tablespoon of skim milk
2 cups of flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
2 teaspoon of cinnamon
1 teaspoon all spice
1 teaspoon of nutmeg
*Preheat oven to 325 F
Bowl 1- Cream sugar & butter. Gradually add the eggs
Bowl 2- Mash bananas, mix in milk, allspice, nutmeg & cinnamon
Bowl 3- Mix Flour, baking powder, baking soda and salt. (You don't have to sift, but it's recommended)
Combine banana into the sugar and butter mixture. Gradually add the dry ingredients into the wet.
Evenly distribute into two loaf pans. I use the tin ones so I could give one as a gift.
Bake 1 hr to 1 hr and 10 minutes.
