Last night I came up with this idea while I was working out. I was craving trail mix and brown rice and I knew I had some left over maple-soy glazed salmon to finish off...so I came up with this really easy side dish:

Easy Trail Mix Brown Rice

1 cu* brown rice
2 cu* water
1/2 cu* trail mix
equipment: rice cooker

Add all ingredients to rice cooker and cook. EASY! It came out delicious, kind of tasted like a cross between a light-stuffing and a rice pilaf. I buy this organic trail mix from a local grocery store (Hannafords) and the kind I used was called Pacific Trail mix and had a mix of almonds, cranberries, pinapple and a few other fruits and it really came out delicious. It was an easy way to spice up my rice and add some more nutrients to dinner.

* When I write cu I mean cup, and this case I'm talking about the cup that comes with the rice cooker, which technically is smaller than a normal cup, but the proportions are all the same in the end.The finished product still in the rice cookerThe finished product still in the rice cooker
