Last night I came up with this idea while I was working out. I was craving trail mix and brown rice and I knew I had some left over maple-soy glazed salmon to finish off...so I came up with this really easy side dish:
Easy Trail Mix Brown Rice
1 cu* brown rice
2 cu* water
1/2 cu* trail mix
equipment: rice cooker
Add all ingredients to rice cooker and cook. EASY! It came out delicious, kind of tasted like a cross between a light-stuffing and a rice pilaf. I buy this organic trail mix from a local grocery store (Hannafords) and the kind I used was called Pacific Trail mix and had a mix of almonds, cranberries, pinapple and a few other fruits and it really came out delicious. It was an easy way to spice up my rice and add some more nutrients to dinner.
* When I write cu I mean cup, and this case I'm talking about the cup that comes with the rice cooker, which technically is smaller than a normal cup, but the proportions are all the same in the end.The finished product still in the rice cooker

It would work to make the rice and then
add the mix in, but actually to get similar results I would say to add the mix in first...because when it's cooked with the rice the fruits and nuts soften up a lot in the process and it
comes out really good!

cc- you should TOTALLY invest in a rice maker- they dont have to be expensive. I think I bought mine at Target for $15 or something. You will use it ALL the time!

6Aimee - I just got it at the Hannafords, in the organic section in a plastic tub. The brand is Aurora and the specific trial mix I used that worked out pretty good was Pacific Almond Trail Mix. Happy trails, get it ... mwah ha ha
