Leg of lamb is one of the leanest cuts of meat -- only 162 calories and 6.6 grams of fat per 3-ounce serving (compared with 196 calories and 11 grams of fat for beef). Lamb's mild taste lets robust Middle Eastern ingredients like pistachios and saffron come through.

Ingredients:

1 box (6 oz) garlic-herb couscous
13 c pistachio nuts, shells removed
1 1/2 Tbsp lemon-pepper seasoning salt
1 Tbsp dried thyme
1 tsp sugar
1 tsp ground cardamom
1 tsp ground turmeric
1/2 tsp saffron threads, crushed
1 1/4 lb boneless leg of lamb, cut into
1-inch cubes
1 c onion, chopped
2 tsp garlic, minced
1 Tbsp fresh ginger, minced
1/2 c raisins
2 c fresh or canned tomatoes, chopped
Directions:

Combine couscous spice bag and 1 1/4 c warm water in a 2-quart microwavable bowl. Cover tightly and cook on high for 6 to 7 minutes or until simmering. Remove and stir in couscous and pistachios. Cover and let stand 8 minutes.
Meanwhile, in a 2-quart microwavable dish, mix lemon-pepper, thyme, sugar, cardamom, turmeric, and saffron. Add lamb and toss to coat.
Mix in onions, garlic, and ginger. Cook on high for 5 to 6 minutes or until vegetables are soft, stirring once halfway through.
Stir in raisins and tomatoes, cover tightly with microwave-safe plastic wrap, and cook on high for 5 to 7 minutes or until lamb is no longer pink. Serve with couscous.
