A little trick for lightening it up!
At the risk of having you all say "I knew that..." I thought I'd post this - just in case you don't all know.
An easy way to skim the oil and fats from liquids is to let the liquid cool a little bit, then pour the liquid into a ZipLock bag. All the oil and fat floats to the top!
Hold the bag by a corner and clip the bottom of the bag with a scissors to make a small hole so that the liquid you want leaks out... Put the scissors down so that you can be ready to stop the flow before the bad stuff starts leaking out too.
So easy... and now you have just the nice "clean" stock!
OK... did everyone already know that?
Use a ZipLock Bag to get the fat and oils out of liquids.

i also heard you can put a slice of bread on top of liquids and it sucks up the nasty fat that seperates on top...

Oh that would have helped me when I was trying to make a gravy for thanksgiving last year!
last time i went to a japanese market, they did sell this one special sheet of paper. u just lay the paper on top of your broth/soup/meal on the stove. like a blot paper, it will suck all of your oil and VOILA a healthy meal! may be easier than cooling off the dish =) if i see a link about it, ill post it!
this is a good idea too though! did NOT know that =)
