 <title>Iced Pumpkin Spice Cookies</title>

Thinking of Halloween is a whole different story though!&lt;br /&gt;
Anyways, pumpkins are the perfect Fall comfort food, they can be made into so many things.&lt;br /&gt;
Sweet things!&lt;br /&gt;
...and did I mention that they are HEALTHY?&lt;br /&gt;
Pumpkins are packed with vitamins and color, and aren&#039;t ALL that carby.&lt;br /&gt;
My all time fave cookies for Fall are most definitely Pumpkin Cookies.&lt;br /&gt;
Since it&#039;s STILL &lt;a href=&quot;http://yumsugar.com/tags/2007+cookie+month&quot; rel=&quot;nofollow&quot;&gt;National Cookie Month&lt;/a&gt;, I thought that these would be the perfect October cookies.&lt;br /&gt;
The main cookie of the National Cookie Month, here&#039;s the recipe:&lt;br /&gt;

&lt;p&gt;Makes 40 delicious cookies&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Ingredients:&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;    2 1/2 cups all-purpose flour&lt;br /&gt;
    2 teaspoon baking powder&lt;br /&gt;
    2 teaspoons ground cinnamon&lt;br /&gt;
    1/2 teaspoon ground nutmeg&lt;br /&gt;
    1/2 teaspoon ground cloves&lt;br /&gt;
    1/2 teaspoon salt&lt;br /&gt;
    1/4 cup butter or margarine, softened&lt;br /&gt;
    1/4 cup applesauce&lt;br /&gt;
    1 1/2 cups white sugar&lt;br /&gt;
    1 cup canned pumpkin puree&lt;br /&gt;
    1 egg&lt;br /&gt;
    1 teaspoon vanilla extract&lt;/p&gt;
&lt;p&gt;    For the icing:&lt;/p&gt;
&lt;p&gt;    2 cups confectioners&#039; sugar&lt;br /&gt;
    3 tablespoons milk&lt;br /&gt;
    1 teaspoon vanilla extract&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions:&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;   1. Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.&lt;br /&gt;
   2. In a medium bowl, cream together the 1/4 cup of butter, applesauce and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.&lt;br /&gt;
   3. Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.&lt;br /&gt;
   4. To Make Icing: Combine confectioners&#039; sugar, milk, and 1 teaspoon vanilla. Add milk as needed, to achieve drizzling consistency.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;You can also SKIP the icing and add a little more sugar to the batter.&lt;/b&gt;&lt;br /&gt;
...Or just skip the icing period, this way you can really taste the wonderful flavors of the pumpkin.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;One more thing, if you want the Halloween effect then dip the cookies into some dark chocolate for the orange and sorta black Halloween decoration!&lt;/b&gt; Yum!&lt;/p&gt;

&lt;p&gt;the recipe calls them &#039;vegan oatmeal cookies.&#039;&lt;br /&gt;
i call them &#039;wonderful little disks of chewy, sweet, delicious, cookie-like goodness that also happen to contain no animal-derived ingredients.&#039;&lt;/p&gt;
&lt;p&gt;these satisfy my sweet tooth perfectly. AND i actually feel good about eating them. how often do you find a cookie recipe that allows you to claim both of those things?&lt;/p&gt;
&lt;p&gt;&lt;b&gt;vegan oatmeal cookies&lt;/b&gt;&lt;br /&gt;
adapted from wildoats.com&lt;/p&gt;
&lt;p&gt;*1.5 ripe bananas&lt;br /&gt;
*1/2 cup applesauce&lt;br /&gt;
*2 teaspoons vanilla extract&lt;br /&gt;
*1/2 cup brown sugar&lt;br /&gt;
*1 cup whole wheat flour&lt;br /&gt;
*1.25 teaspoons baking powder&lt;br /&gt;
*dash salt&lt;br /&gt;
*1 teaspoon cinnamon&lt;br /&gt;
*dash nutmeg&lt;br /&gt;
*dash ground cloves&lt;br /&gt;
*3/4 cup oatmeal&lt;br /&gt;
*2 tablespoons raisins&lt;/p&gt;
&lt;p&gt;Preheat oven to 350°F. Spray a baking sheet with nonstick cooking spray.&lt;/p&gt;
&lt;p&gt;Blend bananas, applesauce, vanilla and brown sugar in blender until creamy. In a large mixing bowl, combine the flour, baking powder, salt, cinnamon, nutmeg, and cloves. Add the blended wet ingredients to the dry ingredients and mix well. Stir in the oatmeal and raisins.&lt;/p&gt;
&lt;p&gt;Drop by spoonfuls onto baking sheet. Bake for 20-30 minutes or until just golden brown.&lt;/p&gt;

&lt;p&gt;note:&lt;br /&gt;
i actually added some finely chopped almonds for a little bit of texture (and protein). these cookies are really quite chewy, which is to be expected from the ingredients. however, i think they&#039;re delicious. i just took a few with me to the movie theater and snacked on them there-- much much better than popcorn with a faux-butter sauce, in my opinion.&lt;/p&gt;
